Holiday Microwave Fudge Recipes

BOURBON COUNTY (BCN) — Everybody loves fudge especially at holiday time. Make this great tasting and easy to make fudge to eat, give away, or both and you are sure to be a hit this holiday season.

Microwave Fudge: I

3 2/3 cups confectioners’ sugar
1/2 cup cocoa
1/4 cup milk
1/2 cup butter
1 tablespoon vanilla
1/2 cup chopped pecans, optional

Combine and cook confectioners’ sugar, cocoa, milk, and butter on high power until butter is melted, about 2 to 3 minutes. Stir until smooth. Blend in vanilla and pecans. Spread into a buttered 8-inch square pan. Cut microwave fudge into squares.

Microwave Fudge: II

2 cups miniature marshmallows
14 oz can condensed milk
1 dash salt
12 oz semi-sweet chocolate chips
1 cup milk chocolate chips
1/2 cup nuts
1 1/2 teaspoon vanilla

In 2 qt. glass measure, combine marshmallows, milk, and salt. Microwave on HIGH 3-4 minutes. Stir until marshmallows melt and mixture is smooth. Add chips and stir until melted. Stir in nuts (may use up to 1 cup) and vanilla. Line 8 or 9 inch square pan with wax paper. Spread fudge evenly in pan. Chill 2 hours, until firm. Turn on to cutting board, peel off paper and cut into squares. Serves 32

Microwave Fudge: III

1 pound powdered sugar
2/3 cup cocoa
1/4 teaspoon salt
1/4 cup milk
2 teaspoon vanilla
1/2 cup butter or margarine
1/2 cup chopped nuts

In large microwave-proof bowl, combine powdered sugar, cocoa and salt. Stir in milk and flavorings; mix well.
Place butter on top. Microwave at high for 2 minutes. Beat until smooth; stir in nuts. Spread in foil-lined or buttered 8″x8″x2″ inch baking pan.
Chill for about 1 hour or until firm. Cut into 36 pieces.
Package in foil-lined, airtight tin.

Microwave Peanut Butter Fudge: IV

12 oz. semisweet chocolate chips
12 oz. peanut butter
14 oz. sweetened condensed milk

In a 1-1/2 quart microwave-proof bowl, melt chocolate and peanut butter on high power for 3 minutes.
Stir well. Add milk and stir until well blended. Pour mixture into 8×8 dish lined with waxed paper.
Refrigerate to chill. Makes approximately 42 pieces
